One of the things that impressed me about this vendor is their selection of fresh seafood. I really do love clambakes and that is what I consider my mainstay when it comes to seafood choices. I do however also enjoy from time to time a nice meal that utilizes one of the other great tasting seafood items.
I really do love the tuna! At the moment my favorite method of preparing the tuna steak is to throw it on the grill, squeeze a lemon over it while cooking and then some fresh veggies and a rice pilaf to the plate. This meal is superb. I have entertained guests with this dish and everyone has left the table happy.
Their other selections are great as well. My second favorite seafood item from this list is the swordfish. I had tried this fish in restaurants in the past but wasn't sure how to cook it. I have used several methods that worked great for tuna which also made for a wonderful swordfish dish. This is truly a great meal maker as well.

Fresh yellow fin tuna, yellow fin tuna is considered to be the highest quality of tuna in the world. World reknown chef's will only use this type of tuna. This is also the kind of tuna reserved for sushi chef's. These yellow fin tuna steaks are 8oz each and are excellent on the grill or just pan seared and served as the main course. Of course there are other ways to prepare this excellent fish, both baking and broiling can create excellent yellow fin tuna dishes.

Swordfish was a new experience for me just recently. I have learned to enjoy this excellent fish. The coloration is very different from the yellow fin tuna, it is almost pale looking. It is stuck in between white and red and presents itself with a lovely pink tone. The swordfish can be prepared much in the same way as Tuna can and is great marinated and thrown on the grill.

Salt Cod or also referred to as Baccala is available year around. The traditional technique for producing high quality baccalà is to take cod from three to six feet long, spit them, salt them for about ten days, and partially dry them. Salt Cod may sound like a hard to prepare fish but there are plenty of great recipes that turn this into a lovely meal.

Everyone is familiear with the North Atlantic Salmon. This fish has what almost everyone is looking for. Great texture, coloration and flavor is the norm for this delicious fish. The versatility of this fish is apparent when you look at the abundance of recipes available. My favorite is to grill it while basting it with a mix of lemon, cilantro, and butter.

New England Scrod is a great cod to add to your dinner table. I would stay away from grilling and searing and would focus on baking, broiling, and poaching this fine fish. The mild flavor accompanied by the firm flesh of this fish will keep you wanting more! The meat does have a tendency to flake easily which is why putting it on the grill can sometimes be troublesome. You can however always create a container out of aluminium foil filled with spices and your cod to prepare on the grill.

North Atlantic Haddock is a New England native fish. This is another white colored, flaky meat fish similar to the cod. The meat is firmer than the cod though. It has a mild flavor and is suited for different marinades and spiced rubs.

The North Atlantic Grey Sole is part of the flounder family. If you have ever had the joy of eating any of the flounder variety of fish you know what a treat this is! The North Atlantic Grey Sole is the highest quality and best tasting fish from this family.
